Beers
In 2011 I discovered that I had an allergic reaction to wheats and barleys and had to adopt a gluten-free lifestyle. In doing so, I had to swear off beer forever I thought. In 2019, I discovered the gluten-free beer brewing community, and determined to make some of my favorite beers gluten-free to enjoy them again. While still a nascent beer brewer, I am learning quickly and enjoy the science and complexity of making gluten free beers!
Dancing Bears Beer is my exploration of Gluten Free Brewing, using alternative 100% gluten free grains, trying to emulate the my favorite beers I enjoyed. Unlike traditional beer brewing where 1000s of recipes have been tried and tested for centuries, Gluten-Free brewing uses novel ingredients and enzymes to replicate the flavor profiles of traditional beers. Sometimes we try weird things, like lentils, quinoa, buckwheat, millet, and rice. Often times there is no direct substitute for a traditional malt flavor, so you have to blend multiple ingredients together to achieve what to traditional brewers is a tried and true staple.
